Will Hoppin’ John variations never end? After more than four years, I’m still at it! This Old Yeller has nothing to do with the story. Yellow split peas are among the ingredients; and I had to have a name for the recipe!
I didn’t have enough split peas; and used lentils to fill out the legume measure. The onion I had on hand was a sweet vidalia. And I nearly forgot to put the onion in the mix!
3/4 cup dried yellow split peas
3/4 cup dried green lentils
3 cups water
1 small bay leaf
1 1/4 cups raw long-grain brown rice
2 1/2 cups water
1 cup coarsely chopped celery
1 cup coarsely chopped onion
14.5 oz can diced tomatoes, well drained
1/4 cup plain, low fat (or non-fat) yogurt
1/2 cup coarsely chopped red bell pepper
1.5 oz chopped mozarella cheese
1/2 tsp dried thyme
freshly ground white pepper and salt to taste
Cook the brown rice in the 2 1/2 cups water; set aside.
Cook the yellow split peas and lentils with the bay leaf in the 3 cups water until just tender; about 30-45 minutes. About 15 minutes before cooking time ends, stir in the chopped celery.
Drain the cooked legumes; and remove the bay leaf. While the pea-lentil mix is still hot, stir in the cheese so it melts. Add the yogurt; salt; pepper; and thyme. Mix well.
Stir in the diced tomatoes; onion; and bell pepper. Mix well. Stir in the rice.
Yield: about 12 cups
Per 1 cup serving: 166 calories; 26.2 grams carbs
