Pink North 🧭

Pink North sounds like Santa’s workshop made out of cotton candy. Actually, it’s a Hoppin’ John variation made with pink beans and Great Northern beans.
1-1/4 cups raw long-grain brown rice
15.5 oz can pink beans, drained and rinsed
15 oz can Great Northern beans, drained and rinsed
1 cup coarsely chopped celery
2 cups water
2 oz grated mozzarella cheese
1/4 cup plain, low fat yogurt
1/2 tsp ground cumin
salt and freshly-ground white pepper to taste
14.5 oz can diced tomatoes, well drained
1 cup coarsely chopped red onion
1/2 cup coarsely chopped red bell pepper
Cook the rice; set aside.
Put the beans and celery into a pot, water just to cover. Bring just to boiling; lower heat to a simmer; and cook until celery is firm-tender, about 10 minutes. Drain.
Stir in cheese; yogurt; and seasonings. Mix well. Add the diced tomatoes; onion; and bell pepper. Fold in the rice.
Makes about 11 cups.
Per 1 cup serving: 184 calories; 33.36 grams carbs.
