Ready for another variation on Hoppin’ John? Let’s look to The Land Down Under, with Kooky Kookaburra. It’s a corny name, but I’m drifting away from using people’s names for my creations. I don’t mean to insult anybody; so my apologies to the JoesLeos, and Petes out there.  I don’t suppose a bird would mind.

1, 1/4 cups brown rice (about 3 3/4 cups cooked)

1 1/2 cups dry kidney beans (cooked firm-tender and drained; about 3 cups)

1 cup coarsely chopped celery

2 tablespoons Worcestershire sauce

3/4 cup grated mild cheddar cheese

1/4 cup plain, low fat yogurt

15 oz can diced tomatoes, well drained

1 cup coarsely chopped onion

1/2 cup coarsely chopped orange bell pepper

salt and pepper to taste

Cook the celery and Worcestershire sauce with the kidney beans. When beans are tender, drain them and stir in the grated cheese. Add the yogurt, salt, and pepper. Stir in the diced tomatoes; onion; and bell pepper.  Stir in the brown rice. 

Makes 9-10 cups.
