Kidsazi Hop??
Yes, here I go again: another variation on Hoppin’ John. You may ask, where do I come up with those goofy names? In this case, “kidsazi” is a combination of kidney and anasazi; the two types of legumes that I used for this dish.
2 oz mozzarella cheese, grated
1/4 cup plain, nonfat yogurt
1 cup coarsely chopped onion
1/2 cup coarsely chopped red bell pepper
salt and pepper to taste
This goes much faster if the rice has been cooked ahead of time! I put the soaked and frozen anasazis and the kidney beans in a 2-quart pot with the celery, and water almost to cover. When the pot reached boiling, I turned the heat way down and let it simmer until the anasazis were al dente.
Next step: transfer the cooked beans to a 5-quart pot, using a slotted spoon. Stir in the grated mozzarella, letting it melt; then mix in the yogurt; and the salt and pepper.
Add the diced tomatoes; the onion; and the bell pepper. Lastly, stir in the brown rice.
Makes about 12 1/2 cups.
