This succotash isn’t sufferin’! In fact, this latest addition to the SpokEasy Recipes collection is great over toast; with a bit of cheese on top.
1 cup dried baby lima beans
14.5 oz can chicken broth*
1 cup canned sweet corn
15 oz can tomato sauce
*substitute water, if so desired
3 cups chopped zucchini
1 cup chopped red onion
1/2 cup chopped scallions
1/2 cup chopped red bell pepper
Sort and rinse the dried lima beans. Soak overnight in water to cover, plus one inch. Drain and freeze for 4-6 hours.
Cook the frozen lima beans in the chicken broth until firm-tender. In a large pot, combine the lima beans and chicken broth; plus all other ingredients. Cook until the zucchini is tender. Add salt and pepper to taste.
Yield: ~6 cups
