Sweet & Sour Sesame Cabbage makes a great light lunch. This recipe makes one serving.
2 cups thinly sliced green cabbage
1/2 cup chopped scallions, bulbs and tops
1 Tbsp olive oil
1/2 tsp sesame oil
1 Tbsp soy sauce
1 Tbsp sweet and sour sauce
1/2 tsp sesame seeds
freshly ground while pepper to taste
Heat the olive oil in a heavy skillet over low heat. Add the cabbage and scallions; sauté a few minutes until cabbage is crisp-tender. Stir in sesame oil, soy sauce, sesame seeds and white pepper. Add the sweet and sour sauce; heat and stir a few seconds more. Remove from heat, and enjoy!
About 265 calories; 19.35 grams carbs. For a reduced carb count, use less sweet and sour sauce.
