This latest Hoppin’ John variation is made using crowder peas; so I hope it won’t crowd me out of here!

 

1 1/4 cups raw, long-grain brown rice

2 1/2 cups water

2, 14.5 oz cans crowder peas, drained and rinsed

1 cup coarsely chopped celery

2 large cloves garlic, minced

2 oz grated mozarella cheese

1/4 cup non-fat plain yogurt

1, 14.5 oz can diced tomatoes, drained

1/2 cup coarsely chopped red bell pepper

1 cup coarsely chopped onion (I used red onion)

Salt, pepper, and other spices as desired

Cook the rice in the water; set aside.

Put the crowder peas, garlic, and celery in a 2-quart pot, with water just to cover. Bring to a boil; reduct heat to simmer; and cook until celery is crisp-tender. Drain immediately, reserving pot liquor for the next garbage soup.

While the crowder peas are still hot, stir in the grated mozzarella cheese. After the cheese has melted, stir in the yogurt and spices. Add the diced tomatoes; chopped onion; and chopped bell pepper. Fold in the cooked rice.

Yield: ~10 3/4 cups

Per 1 cup serving: approx. 172 calories; 22.9 grams carbs; 6.81 grams protein; 1.1 grams saturated fat.
