Blackney Beanpot is a breeze to make overnight in the crockpot. The name comes from BLACK beans and kidNEY beans.
1 large bay leaf
1 tsp ground cumin
2 Tbsp red wine vinegar
salt and pepper to taste
Sort and rinse the beans. Put in crockpot with the water; onion; and bay leaf. Turn the crockpot on Low; and let cook overnight.
Remove bay leaf. Stir in the red wine vinegar; cumin; and the salt and pepper.
Makes about 4 1/2 cups.
Great with brown rice or over a slice of toast; with a little cheese on top.
