Sometimes I get tired of rice; and want a different grain. I needed to get a can off of my shelves, too!
14.75-oz can salmon, well-drained and flaked
1 cup raw quinoa
1 Tbsp olive oil
1 cup chopped scallions
1/2 cup chopped red bell pepper
salt and pepper to taste
Cook the quinoa. Toss with the olive oil, salt, and pepper. Stir in the scallions and bell pepper. Fold in the salmon. That’s it!
Yield: ~6.75 cups
