Carb-Lite SamMac is my latest adventure in the kitchen.
A while back I presented SamMac. At 13 grams of carbs per 1/4 cup, I thought it was too high in those carbohydrates for a pre-diabetic diet.
Eventually I thought up a lower-carb version of SamMac. As usual, part of my inventive process included getting stuff used up so I’ll have a bit more shelf space! I’ve got some semolina pasta that I need to use up, and several cans of salmon.
14.75 oz can salmon, well drained and flaked
1 oz angel hair pasta, broken into small pieces
2 oz grated mozzarella cheese
1 Tbsp olive oil
1/4 cup plain, non-fat yogurt
1/2 cup green peas
Salt and pepper to taste
Cook the pasta al dente and drain. Toss in mozzarella, olive oil, and salt and pepper. Stir in yogurt. Add the salmon, then the peas.
Yield: 3 1/2 cups
Per 1/2 cup serving: 161 calories; 7.8 g carbs.
This stuff does have 41.4 g cholesterol per serving. If you have cholesterol concerns, halve the amount of cheese.
