No, I’m not eating a bald eagle. I’m afraid it wouldn’t taste good, even if I wanted to eat one. Bald Eagle Black Field is another variation on Hoppin’ John. This one uses black beans and field peas; hence Black Field. The Bald Eagle part was inspired by the sighting of a bald eagle. I saw it land atop a telephone pole; and then it began to sing!
3/4 cup dried black beans
3/4 cup dried field peas
1 1/4 cups raw, long-grain brown rice
1 cup chopped celery
1 1/2 oz grated mozzarella cheese
15 oz can diced tomatoes, well drained
1 cup chopped red onion
1/2 cup chopped red bell pepper
I cooked the rice the day before; and chopped everything but the bell pepper (which I hadn’t gotten yet).
Soak dried legumes overnight; drain; freeze for several hours. Put in 2-quart pot with chopped celery; with water to just cover. Cook beans firm-tender. Drain.
Stir in the mozzarella. Add tomatoes, onion, bell pepper, and cooked rice. Mix well.
Yield: ~11 1/4 cups
Per 1-cup serving: 150 calories; 29.2 grams car
