Northern Wilds presents yet another variation on Hoppin’ John! This one uses a wild rice blend and Great Northern beans.
1-1/4 cup dry Lundberg Wild Blend
1-1/2 cup dry Great Northern beans
1-1/2 oz cheddar cheese, grated
1/4 cup plain nonfat (or lowfat) yogurt
15 oz can diced tomatoes, well drained
7 oz can sweet red pimientos, drained and chopped
1 cup coarsely chopped celery
1 cup coarsely chopped onion
salt and freshly ground black pepper to taste
Cook rice according to package directions*; set aside.
Soak the beans 8 hours or overnight; drain; and freeze. Cook the Great Northerns with the chopped celery until beans are firm-tender. Drain.
Mix the beans with the grated cheese until cheese is melted; stir in yogurt, salt, and pepper. Add the diced tomatoes; chopped onion; and chopped pimientos. Stir well. Fold in the rice. Makes about 10 1/2 cups.
*I cooked the rice blend without the optional oil or butter.
Per 1 cup: 144 calories; 26.21 grams carbs.
