Liltin’ Limas sounds rather like a dance; not like the latest Hoppin’ John variation. I had a couple of cans of lima beans; and I needed to use them up!
1-1/4 cups raw, long-grain brown rice
1 cup coarsely chopped celery
2, 15 oz cans lima beans, well drained
1, 15 oz can diced tomatoes, well drained
1/4 cup plain, low-fat yogurt
1 c coarsely chopped red onion
1/2 cup coarsely chopped red bell pepper
1 1/2 oz grated cheddar cheese
salt and pepper to taste
Cook the rice. Set aside.
Put the lima beans and celery in a pot with water just to cover. Bring to a boil; reduce heat to a simmer; cook until celery is crisp-tender; about 8-10 minutes.
Drain the beans. Stir in the cheese; yogurt; salt and pepper; tomatoes; onion; and bell pepper. Stir in the rice. Makes about 10 3/4 cups.
Per 1 cup serving: about 143 calories; 21.74 grams carbs.
