Feta BroccoYam 🧀

Feta BroccoYam is me getting inventive again. I conjured up another variation on Cauliflower Potato Cheddar Mash (ADA Vegetarian Cookbook, page 87.) This one uses feta cheese instead of cheddar; replaces the cauliflower with broccoli; and substitutes sweet potatoes (sometimes called “yams”) for russet potatoes.
2 lb sweet potatoes, peeled and cut in chunks
2 cups raw broccoli, cut in small pieces
1 tsp olive oil
1/4 cup crumbled feta cheese
1/4 tsp freshly grated nutmeg
salt and freshly ground black pepper to taste
3/4 cup plain, nonfat yogurt
1/2 cup coarsely chopped red onion
Put the chopped sweet potatoes and broccoli in a large pot with water to cover, plus about one inch. Bring to a boil. Lower heat to a simmer and cook until vegetables are tender. Drain.
Add olive oil and mash the vegetables, adding a bit of cooking water if needed. Stir in feta cheese, nutmeg, salt, pepper, and yogurt. Mix in onions.
Yield: about 6 3/4 cups.
Per 1-cup serving: 93 calories; 7.15 g carbs.
