OK — not really a black cat. Boppin’ B&B is — here we go AGAIN — the latest Hoppin’ John variation. And I thought I had run out of fresh ideas for this. I ought to name my kitchen The Broken Record!
1-1/4 cups long-grain brown rice
15 oz can black beans, drained and rinsed
15.5 oz can black eye peas, drained and rinsed
1 cup coarsely chopped celery
2 oz grated medium-sharp cheddar cheese
15 oz can diced tomatoes, well-drained
1 cup coarsely chopped red onion
1/2 cup coarsely chopped orange bell pepper
salt and pepper to taste
While the rice was cooking, I chopped the vegetables, keeping the celery separate. When the rice was done, I dumped it into a bowl; and poured the canned beans into the pot, along with the celery. I cooked the mix until the celery was tender, about 15 minutes.
After that, I transferred the bean mix to my big pot, using a slotted spoon. Next step, stir in the cheese. Then came the tomatoes, onion, and bell pepper. Lastly, I folded in the rice. Makes about 10 cups.
Per 1 cup serving: ~163 calories; ~22 grams carbs.
