SamMac? What kind of a concoction is that??

When you’ve been diagnosed with prediatebes, and your abode is well-stocked with “naughty” foods; but you don’t want to pitch all those goodies into the garbage; you start getting creative.

Over time, my frequent jaunts to the salvage store resulted in my having a dozen or so boxes of mac n cheese on hand. That stuff is high carb! How could I use it without going overboard on the carbs?

My answer came in the form of a can of wild-caught salmon; another salvage store find. The result: SamMac!

14.75 oz can salmon, well-drained and flaked

1/2 cup peas

2 Tbsp chopped scallion tops

1 Tbsp fresh rosemary leaves

7.25 oz box mac n cheese (any brand)

1 Tbsp olive oil

2 tsp parsley flakes

salt and freshly ground white pepper to taste

1/4 cup plain, low-fat yogurt

Cook pasta al dente; drain. Return to pot. Add olive oil, parsley flakes, salt, and pepper; toss. Stir in yogurt and contents of cheese packet. Put pot back over very low heat and stir gently to blend in the cheese. Stir in salmon, peas, rosemary, and scallions. Remove from heat. Makes ~ 4 1/4 cup. Per 1/4 cup: 129 calories; 13 grams carbs.

Feel free to use tuna instead of salmon. Or chopped chicken or turkey white meat. For me, using that salmon meant freeing up a bit of space!
